She was probably irritated being so close to birthing, with her hormones rising a bit. Some rabbits personalities change quite drastically after birthing, some stay just the same. If she doesn't mind you petting them, she probably won't mind you picking them up. Go ahead and take them out one at a time, make sure their bellies are full and round, that they have all their limbs and seem healthy. As long as it's warm outside taking them out of the hutch for a few minutes shouldn't hurt them, but remember they can get chilled very swiftly until they have their fur coats in!
